Maize-meal dumplings steamed on top of a simmering potjie — the old blog's cleverest trick, revived. They swell in the gravy's steam and arrive as free extra supper from ingredients you already had.

Ingredients

  • 1 cup maize meal
  • 1 cup cake flour + 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp cold butter
  • ±200 ml milk

Method

  1. Whisk the maize meal, flour, baking powder and salt together; rub in the cold butter.
  2. Stir in just enough milk for a soft, sticky dough.
  3. Drop spoonfuls on top of a simmering potjie (or any stew at the fire), lid on.
  4. Steam 20–25 minutes. The lid stays ON — a peeked-at dumpling is a flat dumpling, and the potjie's no-peeking law applies in full.
